Made this tonight and it was excellent. My apricots were not too sweet so the honey really shined, and I’m sure I’ll make this again with any other fruit i have on hand. I’ve made a lot of similar recipes and really liked these biscuits - they were easy to turn out, not too sweet, good texture, and became beautifully caramelized on top. Can’t wait to have it for breakfast in the morning too!

Apricots and figs have been so plentiful here in California this summer. I see a delightful combination of both in this cobbler. Can't wait to make it!

Baked again last night with some modifications...used 2x the fruit, in a 9x13 pan. Used peaches instead of apricots, and doubled the biscuits as well. Used a champagne flutes to cut out the biscuits, so they were much smaller and more plentiful. It was sooooo good. Honey brought out the peach flavor brilliantly.

Made with peaches and apricots. Needed a little more sugar on top than I added. Easy to make with ingredients on hand.

I made this to use up some disappointing in-season apricots that had zero flavor and a mealy texture, and it was a big hit, erasing all negatives the fruit had when raw. I'm going to steal the shortbread section for other purposes, too -- those were divine even on their own.

good recipe but much too sour- i would add more honey or sugar and use less lime juice because it really was barely sweet. i served it with whipped cream mixed with some sour cream and the richness did cut the sourness a bit, but some ice cream would be even better

Sigh, I was really looking forward to making this and was super let down. I halved the topping because the comments said there was too much, but I think that made the liquid overwhelm the shortcakes so it took longer to bake. I used lemon juice and apricots and the result is almost too sour to eat. I should've upped the honey because I can barely taste it. A rare miss.

This was very good, cobbler biscuit especially - will definitely make it again w/tweaks. Read comments & made with 1/3 peach to 2/3 apricot, & it was still quite tart. Agree that lemon added unnecessarily sour note & next time I might add orange flower water instead. I also would up the honey, especially if it was all apricot. Our heavy cream had gone off, so I served with creme fraiche which of course added to tartness - whipped cream or vanilla ice cream would have been better.

This is a great recipe. I've made it a couple of times: adding 2-3 cups of (defrosted) frozen blueberries to up the amount of juice is a must, otherwise it's a bit dry. Use liquid crème fraîche in place of heavy cream. A strong-flavored honey works beautifully. Lime instead of lemon.

A tablespoon of cobbler seems (and tasted like) a lot. Also, the ratio of fruit to topping seemed off; too much topping, not enough fruit.

I really enjoyed this, but I love apricots, family members would’ve preferred peaches, and I’ll probably do half and half next time. I’m not a fan of cloyingly sweet desserts, abc this was the perfect amount of sweetness for me with a dollop of homemade whipped cream.

Wow, this recipe is a sleeper that could really use some more love! Made for the more substantial half of a summer birthday lunch today and three of us nearly ate the whole thing. Here in Central Europe apricots are the big fruit at the market in early summer and they shine in this preparation. This is a special recipe - the honey, lime juice, and the biscuits combine so nicely with the fruit - and it comes together quickly. Really great with vanilla ice cream of course!

I had 3lbs of apricots so I did 1.5x the recipe and made it in 2 8x8 dishes. Both came out great! The only thing I will adapt for next time - my apricots weren't terribly sweet, and the lime juice gave the base a slightly bitter/sour flavor as a result. I think I will shift to orange or pineapple juice next time to make the fruit base just a bit sweeter.

This has become my go to recipe for either summer or winter fruits in my house. Ok, the cobbler topping has become crumble - there's less mess with oats (but that's me) but if you can master this recipe (and let's face it Ms. Roman has gone out of her way to make this simple to master) then dessert is never an issue again. Simplicity itself.

Tasty, and not too sweet! I didn't have quite enough honey so supplemented with sugar, and was about half a pound short of apricots but it still turned out great. Eating with a little whipped cream as a decadent breakfast.

Very good! not too sweet. I did a mix of peaches and apricots and liked that, as the apricots are much tarter and the peaches sweeter. i made in the winter. Easy to make!

I've made this twice now. It's so good and pretty easy. I added a teaspoon of poppy seeds and some grated lemon zest to the dough and it gave it some zing and the poppy seeds looked really nice. Increased the amount of fruit a bit, since you really can never have too many apricots.

Great dessert. Biscuits were super easy to make and the combination of sweet and salty complimented perfectly the apricots. Made it the same day as I served it but heated it slightly before serving.
