Ingredients list for theSausage Parmesan Cream Cheese Soup
- 1 lb (450g) Italian Sausage
- 1/2 medium onion, thinly sliced
- 1 tablespoon garlic powder (or 3 garlic cloves, minced)
- 1 (8 oz – 225g) canpureed tomato
- 1 teaspoon Italian seasoning
- Salt and fresh cracked black pepper
- 4 medium Roma tomatoes, diced (or 1 small can petite diced tomatoes)
- 1/2 cup (4oz)cream cheese
- 1 cup (250ml) chicken broth
- 1 cup heavy cream
- 1/4 cup parmesan cheese
- Fresh chopped parsley, for garnish

Directions
1. To make theSausage Parmesan Cream Cheese Soup:Turn your Instant Pot to saute mode. Allow to warm up and add olive oil and onions, and cook until slightly soft.
2.Addsausage meat, break up with a spatula, and cook until it’s no longer pink, stirring frequently to make sure it doesn’t stick to the insert. Press CANCEL to stop the saute mode of your Instant Pot.
3. Add the ground tomatoes, diced tomatoes, garlic powder, salt, pepper, Italian seasoning, cream cheese, and chicken broth. Give a quick stir to mix everything together.
4.To cook the sausage soup, placea lid on theInstant Pot, close, and make sure the vent is set to SEALING position. Hit PRESSURE COOK for 5 minutes. When pressure cooking is done, do a quick release, then carefully remove thelid and hit CANCEL to turn the Instant Pot off.
5.Stir in heavy cream and Parmesan cheese to the sausage soup. Divide the sausage parmesan cream cheese soup into bowls, garnish with fresh chopped parsley and more parmesan; then serve immediately. Enjoy!

Wow. First time and it was just wow. With some crusty bread, that I did not have but dreamed about the entire time I was eating this, this soup would be at the highest level of yes. We LOVED this recipe. I added jalapeños when the Italian sausage was browning and some quartered baby red potatoes. My brother served his over some chopped kale. It was a hit and I already have requests to make it again.

Love this! I've made it many times and after the first time I always double the recipe because we eat it so much. This is a great vehicle to add other keto-friendly foods. I add riced cauliflower, bacon bits, chia seeds, hemp seeds, and black sesame seeds. I also spice it up by using Ro-tel instead of some of the tomatoes. A sharp cheddar works if you don't have parmesan.

It was great! I did change some things - I used hot Italian sausage, used the full block of cream cheese, added more Italian seasoning, oregano, fresh basil, rigatoni pasta and a little more cream. Fantastic!!!

It’s really tasty. But to look like the recipe you’d have to use a Dutch oven. Brown the sausage and drain it. Add the other stuff and cook it. Then purée it. Then add the sausage and fresh tomatoes to the soup. #FoodBloggerRant
